My go-to holiday canapes!

One of my favourite things about the holiday season is spending time with family and friends. I always love to have a few easy canape recipes up my sleeve for casual entertaining so I thought I'd share with you one of my favourites - Toasted Asparagus Rolls

Once you've made them, these asparagus rolls will be a winner for all your events for ever more. Your guests will be lining up when you pass them around and friends will always ask you to bring them.

Ingredients:

  • Naughty white bread, sandwich slice
  • Asparagus - I usually use canned, even when asparagus is in season as they tend to eat more cleanly so less embarrassing accidents. Plus the texture of the crisp outer vs the soft filling is sublime. But of course fresh asparagus is also fab.
  • Kewpie mayo
  • Wasabi
  • Butter

Method:

  • Cut crusts off bread.
  • Smear a thin layer of butter on one side.
  • Mix kewpie mayo and wasabi to taste.
  • Lay bread butter side down.
  • Smear about 1-2 tablespoons of mayo/wasabi mix.
  • Place asparagus on the diagonal (one, two or three depending on thickness of asparagus).
  • Roll up and put on a lined oven tray with seam side down.
  • Crack some salt over.
  • Toast for about 15-20 mins in fan bake oven, until golden.


Leave for a couple of mins to cool slightly as they can be very hot inside.

Warning - you will have to guard them once they are out of the oven from partners and kids who swoop on them when your back is turned for a millisecond!
